Erin's Watermelon Gazpacho Recipe

 

 

 

  • 2 large tomatoes, diced
  • 1/2 serrano chile
  • 2 cups cubed fresh watermelon
  • 1 lemon, juiced
  • 1/2 cup extra-virgin olive oil
  • 2 minced green onions
  • 1 English cucumber, diced
  • 3 tablespoons minced fresh basil, plus more for garnish
  • Himalayan salt and freshly ground black pepper to taste
  • 1 ripe avocado, cubed

 

In a blender, puree the tomatoes, chile and the watermelon. Pour in the lemon juice and most of the olive oil and pulse. Add the onion, cucumber and basil and season with salt and pepper. Puree until smooth. Allow the gazpacho to chill in the fridge for at least an hour. Pour into chilled bowls and sprinkle with basil, avocado, and remaining olive oil . Serve cold.
