  • 1 LB of baby Bella mushrooms, stems removed
  • 1 large Sweet Potato
  • 2 Tablespoons freshly grated ginger
  • 2 Tablespoons freshly grated turmeric

  • 1/2 cup full-fat coconut milk
  • 1 tablespoon coconut manna
  • Salt and pepper to taste
  • Micro Cilantro for garnish
  • Fresh Lime juice for garnish
  • 1 teaspoon avocado oil
Instructions
1. Preheat your oven to 400 degrees.
2. Wash and dry your sweet potato. Place it on a baking sheet and bake until it begins to caramelize and softens, approximately 45 minutes. Allow the sweet potato to cool completely. This step can be done a day ahead for ease of prep.
3. Position your de-stemmed mushroom caps-down on a lightly oiled baking sheet.
4. Peel cooled sweet potato and place the flesh in a bowl. Integrate your spices, coconut manna, and coconut milk.
5. Using an electric hand mixer or potato ricer, blend the ingredients until you achieve a smooth and creamy consistency. Adjust the amount of coconut milk as required.
6. Taste the mash and tweak the seasoning if necessary.
7. Generously fill the mushroom caps with the sweet potato mixture.
8. Bake the mushrooms for 20-30 minutes. Ensure the mushrooms are soft, and any liquid is fully evaporated before removing them.
9. Let the mushrooms cool down, then garnish with lime juice and micro cilantro.
